Time for another WIAW post
Lots to share with you this week so let’s dive right in!
What have I been eating lately?
More packed lunches:
Leftover Salmon & Farro Salad w/ a yogurt bowl and popcorn
Tuna salad wrap with hard boiled eggs and carrot sticks
Lentil veggie spaghetti, red peppers and applesauce
Tuna salad with triscuits and pb & J
LOTS of coffee!
Coffe with crockpot steelcut oats- recipe soon!
Coffee in my new thrift store mug
Coffee for hubby with a jalapeno cheddar bagel
Snacks and breakfast!
My new fav spicy black bean dip
My favorite restaurant hummus
Healthy bites!!! CLICK HERE for more info about them
My fav flavors are mint choc chip and pb banana cinnamon
Baked apple cinnamon french toast for a weekend breakfast
Blueberry banana fro-yo for dessert
We went to the farmer’s market on Saturday and loaded up!
I got tomatoes, beans, potatoes and a baguette.
I used the baguette in my overnight baked french toast!
Then we went to another market and stocked up on
Honeycrisp apples- my all-time fav – and lots of bell peppers!
I turned some of the apples into crockpot applesauce.
But the best farmer’s market find was mini bell peppers!
I used them to make a yummy appetizer:
So simple, yet so delicious.
I mixed together goat cheese and pesto,
then stuffed it into mushrooms and mini peppers.
I baked them for 12 min at 400 degrees
And then we devoured them!
Mini peppers are my new favorite thing.
So.freakin’.cute.

Your food always looks so fantastic! Great looking salmon farro salad. I bet that was a fantastic filling lunch. I really want to try those Healthy Bites. Need to go an order in!

Will you cook for me?
Your posts always inspire me to cook more, and prepare more for the week. I always start off with the best intentions but… well, let’s just say we end up taking out A LOT!
It all looks SO amazing!! I have a couple of questions though …
What is farro? Did you make the froyo yourself and if so, can you share how you did it (Yours looks SO yummy! I love froyo but am adjusting to newly diagnosed lactose intolerance and miss it a tonne …)

farro is a grain! similar to brown rice but chewier. check your bulk bins for it! i love it! as for the fro-yo, it’s not technically fro-yo. it’s just a frozen banana plus a handful of fresh blueberries in a food processor. if you haven’t had banana fro you def give it a try. just freeze a banana in chunks, process until smooth (you may have to let it sit out for a couple minutes) then mix in whatever you want- pb, chocolate chips, fresh fruit, etc!

Definitely going to be looking into both of them, but I’m thinking (aka so positive) that banana blueberry froyo is going to be making an appearance as early as this afternoon.

Farmer’s markets are winding down around here. I am SO sad to say I didn’t get to a single one this summer. I just realized that and am very disappointed in myself! haha

I was reading your coffee section on this post and came to the “hubby” part about coffee and bagel…but I read it wrong and thought you were implying that he was drinking coffee that was “jalapeno cheddar” flavored. That wouldn’t be so great…lol!
