At this rate I’m going to have to change the title of these posts to Monthly Eats since I can only seem to get my act together to post them once a month! Oh well, I still enjoy rounding them up and sharing with you. Hopefully they give you some mealtime inspiration!
So, here’s a look at some of the things I’ve been eating over the past month or so:
The occasional oatmeal for breakfast, although those have been few and far between – not sitting well in the mornings currently so I’ve been sticking with a couple bowls of Cheerios most weekdays.
Salmon! We grilled it on a cedar plank for the first time and loved it so we’ve done it a couple other times since then. So easy and such easy cleanup as well!
Did I mention eggs?
Yeah. Lots of eggs.
Chicken every which way.
Usually grilled. With veggies.
Sometimes on a sandwich. Sometimes kebabs!
On sandwiches, salads and nachos.
Pork tenderloin. We grilled some.
Ate it plain, in mac and cheese, in quesadillas…
Ice cream, s’mores (not nearly as fun on a gas grill), Sweet Potato Brownies and ice cream with defrosted blueberries and a graham cracker!
Tacos and one of the best dinners I’ve had in a while in Chicago- mixed seafood grill with salmon, shrimp, scallops and a crab cake.

Oatmeal with cinnamon almonds
Health Warrior Chia Bars
Snacks- apples with pb, pb & j waffles
Baked goods – Blueberry Muffins & Zucchini Bread
Hubby’s burger, corn and cottage cheese with tomatoes
Homemade mac and cheese
Whew! I think that’s most of it!
