Weekly Eats 59

Hi Friends!

At this rate I’m going to have to change the title of these posts to Monthly Eats since I can only seem to get my act together to post them once a month! Oh well, I still enjoy rounding them up and sharing with you. Hopefully they give you some mealtime inspiration!

So, here’s a look at some of the things I’ve been eating over the past month or so:


Weekend pancakes.
The occasional oatmeal for breakfast, although those have been few and far between – not sitting well in the mornings currently so I’ve been sticking with a couple bowls of Cheerios most weekdays.


Salmon! We grilled it on a cedar plank for the first time and loved it so we’ve done it a couple other times since then. So easy and such easy cleanup as well!


Did I mention eggs?
Yeah. Lots of eggs.


Chicken every which way.
Usually grilled. With veggies.
Sometimes on a sandwich. Sometimes kebabs!


More chicken.
On sandwiches, salads and nachos.


Pork tenderloin. We grilled some.
Ate it plain, in mac and cheese, in quesadillas…


Ice cream, s’mores (not nearly as fun on a gas grill), Sweet Potato Brownies and ice cream with defrosted blueberries and a graham cracker!


Dinners out.
Tacos and one of the best dinners I’ve had in a while in Chicago- mixed seafood grill with salmon, shrimp, scallops and a crab cake.

Shrimp, crab cake and sweet potato fries
Oatmeal with cinnamon almonds
Health Warrior Chia Bars
Delicious pretzels
Airport breakfast


Snacks- apples with pb, pb & j waffles

Baked goods – Blueberry Muffins & Zucchini Bread


More randomness-
Egg Sandwich
Chicken Sausage
Hubby’s burger, corn and cottage cheese with tomatoes
Homemade mac and cheese


4th of July Eats
Ice Cream with fresh nectarine
Grilled Stuffed Mushrooms
Almond Crusted Chicken Tenders

Whew! I think that’s most of it!

  4. All of this looks delicious! And about the cedar plank salmon…. absolutely LOVE it. The first time I tried, I totally didn’t soak the plank long enough (can you say flare ups?!) but I’ve learned my lesson. Yours looks fabulous!

  6. I love that your meals look really varied. I guess that’s why you’re a RD. I just did a What I Ate Wednesday post http://runwright.net/2014/07/09/what-i-ate-wednesday-july-9-2014/. Last week, I made the vegetarian decision and I am trying not become soy-dependent so I eat a lot of beans and nuts, fruits and veggies.

  12. I am with you sister! I am not sure why but I have been slacking big time on my Sunday prep. I have been really exhausted and I don’t have the pregnancy issue! But I like you have tried to compensate somehow. I will make just one meal on Sunday for dinner like a roasted chicken. Then each day I tried to find on Pinterest really fast under 20-30 minute recipes to make for lunch or dinner. It has been working so far. I hope I get my mojo back!

  14. Jealous of the delicious eats from the awesome new grill! Eggs are my go to for when I dont want to cook so in the summer I eat them more often. Tried the sweet potato brownies out for the 4th and everyone loved them!
