Hi Friends!

Time for a quick Weekly Eats post! Here’s what we’ve been eating lately.

Breakfasts and Lunches

1. Post crossfit breakfast: sauteed spinach, green peppers, onions and black beans w/ avocado, eggs, pear, toast and salsa.
2. French toast, eggs, hash browns and fruit a la hubby!
3. Greek black bean burger over spaghetti squash with fresh mozz and avocado…plus a pear and some chips.
4. Tuna quinoa cakes with an egg, cottage cheese and fruit for hubby

My Lunches

1. Fritatta wrap with cheese and avocado, pear and spag squash
2. Salmon taco salad, chips and salsa, carrots and hummus, pear
3. Shrimp spring rolls, plantain chips, spag squash w/ black bean balls, green beans
4. Salad with quinoa, black beans, veggies and a Sweet Potato Quinoa Black Bean Burger with Cranberries, green beans and a pear

Hubby’s Lunches

1. Shrimp tacos, curried sweet potato soup and fruit
2. Leftover fritatta with a pb sandwich and  fruit
3. Tuna salad sandwich, carrots, yogurt, plantain chips
4. Pb sandwich, eggs, carrots, cottage cheese and fruit

1. Fritatta with quinoa, beans, red pep & onions & fish chowder
2. Salmon taco salad with black beans and quinoa
3. Sweet Potato Quinoa Black Bean Burger with Cranberries, green beans and chips
4. Curried sweet potato soup with quiona and shrimp spring rolls

Dinners and Desserts

1. Friday is becoming quesadilla night at our house- sweet potato and black bean with red peppers and onions
2. Curried sweet potato soup with black bean meat(less) balls
{recipe coming soon!}
3. Sometimes you just need a good old fashioned cookie just like mom used to make. Oatmeal scotchies. I mailed some to my dad for his birthday and used this recipe.
4. Strawberry banana “fro-yo”. And yes, i’m still eating a bag of Christmas m&ms

  14. So far, the best thing I’ve eaten all week was last night’s dinner. I made tempeh sloppy joe’s, and it turned out to be really tasty. Otherwise, I’m looking forward to sushi this Friday, which I’m sure will be FABULOUS.

  15. I love your idea to stuff sweet potato in your quesadillas! I used leftover baked butternut squash from the pasta sauce I made on Sunday for butternut squash/black bean burger quesadillas and they were awesome! I love when the squash filling spills out a little and becomes carmelized on the griddle. Brilliant!

  21. This week I am loving my multi grain Omega 3 bread with coconut oil and cinnamon spread on top, My kids love it too, we had toast for dinner last night, seriously, it’s what everyone wanted and I did not feel like arguing.

  22. Best thing so far was Monday night! I was able to go to Costco with my Mom and picked up my favorite Asian Chicken Wrap Sandwich. I’m able to get 2 meals out of it. Broil it, so it gets crispy, and top with Frank’s Red Hot and I’m one happy camper. The other half is getting demolished tomorrow. 😉

  23. Is there a trick to keep your sphaghetti squash from being watery and mushy if you cook it in advance? I cooked it a few days ago and when I ate it last night it was watery and had lost all of it’s texture. Your meals look amazing. If I had you to cook everything for me I would be a lean green bean too. : )

    • i always undercook mine. I like it a bit crunchy to begin with, and that way when i reheat it, it cooks a little more without getting soggy. and i’ve noticed it’s less watery if you undercook a little too!

  24. Love it and I love that your hubby is taking pics too (he seems to like pb sandos!) A quesadilla sounds (and looks) good, I think I am going to have to make that tonight!
