Sunday Food Prep Inspiration 60

Hi Friends!

Time for more food prep inspiration!


Here’s what I prepped last weekend! I did half in the morning, took a break and did the other half later on:

Meal prep done! Cucumbers, quinoa breakfast bars, broccoli, brown rice, egg salad, carrots, HB eggs, blueberries, quinoa, and the hubs even helped out by making chicken salad!

I live with my boyfriend. I am vegetarian. He is not. Hitherto, I have to make double the dishes!
For Him: Cajun Chicken Paninis (lunch), Rosemary Crusted Chicken + Honey Mustard Sauce (dinner), not pictured: healthy banana bread bars (snack) 
For me: Roasted Cauliflower + Sweet Potatoes (to add to my lunch salads), Japanese Tofu Curry (dinner), not pictured: kale for salad, nut butter (for smoothies and snacks), frozen fruit (for smoothies)
To share: Black Bean Quinoa Salad (I add to my salads, he has as a side at dinner)

Today I did a small food prep. Made some roasted broccolini, used this recipe to make pumpkin muffins for snacks at work, used this recipe for spaghetti squash casserole (used chicken sausage and added mushrooms and spinach) to bring for lunch for 4 days, and sweet potato fries to supplement dinners!

From left to right…  green smoothies, split peas, black bean burgers, overnight oats, homemade trail mix, tofu fingers, roasted broccoli, turkey burgers, veggie lasagna and veggie quinoa!
Roasted multicolor cauliflower (yummm), roasted sweet potato wedges, a riff on @theleangreenbean’s baked oatmeal recipe and her Asian black bean quinoa burgers, my fave and long overdue return to my food prep Sunday menu!

  2. I really need to start doing this again. My diet is so much easier to manage when I food prep. I’m bad with coming up with foods to actually prep though, but this is helpful, and I’m sure as comments roll in I’ll get more ideas.
