It’s time for another Secret Recipe Club post
This month I had Noelle’s blog- Opera Singer in the Kitchen. I really enjoyed looking around her blog because she had tons of vegetarian/vegan recipes. However, I decided for this month that I was in the mood to bake, so I settled on these Double Layer Chocolate Banana Bars. They seemed like the perfect way for me to use up the overly ripe bananas I had and they were just a bit more exciting than plain old banana bread.
I followed her recipe pretty closely but did make a few changes. Since the recipe was vegan, and I didn’t need that, I used real butter and eggs. I also used white whole wheat flour instead of pastry and half the amount of sugar. Plus, I only used a sprinkling of chocolate chips and no peanuts. Lastly, I decided to make muffins instead of bars.
They turned out great! I brought them to work and they were a huge hit!

And the end result even looked kinda fancy!

So pretty! Love the hidden layer of chocolate at the bottom of each muffin… finding a bit of surprise chocolate is never a bad thing, in my books.

Love the layers! What a fun twist on banana muffins. YUM!
While I’m not a huge fan of the chocolate banana combo, I LOVE the effect you got here. My mind is reeling with other ways to do this with flavor combinations I am a fan of. Great SRC pick!
