Over the weekend, the hubby and I went grocery shopping. We were in the mood for some seafood but none of the fresh fish looked all that appetizing at our usual grocery store so sadly, we left without any. While we were out running errands later, we stopped by the seafood counter at another store and picked up some delicious looking Grouper.
When we brought the fish home and I saw the large avocado we had purchased earlier, I immediately knew I wanted fish tacos.
These are a nice change from the typical taco and fish cooks fast so they come together really quickly!
Before we started the fish, the hubby cooked some rice and got to work on a roasted sweet potato and some green beans.
When those were almost done, I seasoned the fish with paprika, black pepper, cayenne pepper and a sprinkle of kosher salt and seared it in a hot pan for about 4 minutes on each side.
While the fish was cooking, we sliced the avocado, cut up a tomato and defrosted some black beans.
After removing the fish from the pan, we flaked it apart with a fork. It was steaming!
Then we assembled our tacos and dug in!
Another simple, healthy meal in the books!

Whenever we go to a Mexican (it’s Tex Mex here) restaurant, I always order the fish tacos! So delicious and light. It’s perfect for any time – lunch or dinner. The way I eat fish – I could also even do this for breakfast.

It’s funny- Daniel just asked me to make fish tacos the other night (and he really doesn’t typically like that!), so these are coming at a perfect time- they look so delicious- esp with the avocado slices

I had never had fish tacos until our trip to California a few weeks ago. They were amazing. I will have to recreate them using your recipe!
