First things first. I have a super busy quarter coming up. I just got a part-time job and between that and school, I’m gonna be gone until at least 8pm during the week. I’m looking for some casserole recipes that I can make ahead and freeze to make dinner a little easier for the next couple of months. Any links/recipes/suggestions would be appreciated!!
Moving on
After crab cakes and quesadillas, chicken sandwiches are probably my favorite thing to order when we go out to eat. I’ve had some pretty good ones lately. I also like making them at home…see here and here…
After the Diet Pepsi disaster, I put some chicken in the fridge to thaw because I couldn’t get the frozen pepsi off of it! I decided tonight would be a good sandwich night and I started thinking about what kind to make. Remember when I posted this Tandoori Chicken and Spinach Salad? I loved it and had been thinking about making it again, but I decided to change it up a little and turn it into a sandwich.
I used the same recipe for the marinade, but instead of dicing the chicken I left it whole. After about 3 hours in the marinade, I stuffed some spinach inside and baked them in the oven at 425 for about 20 minutes.
When the chicken was done cooking, I sliced it a placed it on an Arnold Sandwich Thin along with some more fresh spinach. I topped the chicken with some red pepper slices and red onion.
Now here comes the best part….
While the chicken was cooking, I also diced up a sweet potato for my fav curried roasted sweet potato side. I started thinking about how it would taste ON the sandwich and decided it would be delicious. I left a few slices of sweet potato whole instead of dicing them and popped them in oven, flipping them once.
When they were finished, I put a few slices on top of my sandwich and voila! Deliciousness.

Shockingly, I don’t think I’ve ever actually put them IN my sandwich…but perhaps now I’ll try? Although I must say I used to love to put chips in my sandwich, and I just thought of how tasty a sweet potato chip + chicken salad combo might be…

This chicken looks fantastic. I have not added sweet potatoes to my sandwiches, however, I love sweet potatoes anytime, anywhere!
