Pork & Sweet Potato Bowls

I’m telling you guys, crockpot pork is the best thing ever! I’ve made at least 5 meals with this batch of shredded pork tenderloin, including carnitas taco pie, pork nachos, and this meal (two nights in a row)…

Some nights I’m just not in the mood to use a plate. I was glad to find out a few weeks ago that I’m not the only one :)

Anyways, the other night I was in a bowl kinda mood so I got to work making some beautiful bowls for dinner.

Here’s how it went down:

1. Fresh baby spinach

2. Quinoa

3. Roasted sweet potatoes

4. Shredded pork

5. Avocado

6. Tomatoes and black beans


Enjoy with your hubby one night…

Then make yourself a strikingly similar, but not as pretty one
the next night when you’re eating alone :)

So tell me…do you prefer a bowl or a plate?!

  1. Hahahaha obviously I prefer a bowl (or, you know, just the pan I cooked it in)…but right now I’m wishing I, too, had a Crock Pot to eat from! Your carnitas yesterday were amazing…and this just sent me over the edge…must eat Mexican now…

  3. wow! Those are awesome looking bowls!! I’m much more of a bowl girl. When I want a salad beast, I usually use a small mixing bowl 😉 Makes tossing the dressing so much easier! I also LOVE the crock pot. I’m actually making bbq chicken in the crock pot as I type this
