Hi Friends!
Last week something special happened. Hubby and I celebrated one year meat-free! For those of you that don’t know, going vegetarian this time around was hubby’s idea. We decided to try it out for a month…and 12 months later we’re still going strong! Although we didn’t eat fish for that first month, we do now eat fish occasionally… but we’ve been meat-free for a year! Here are my recaps of what we ate during those first 4 weeks:

To celebrate 12 months of meat-free living, I decided to round up my 12 favorite meatless recipes of the past year and share them with you guys!

Wow, those are some seriously amazing recipes! I’m pretty much meatless myself – well, I don’t cook any meat but will eat it occasionally if I have a craving and it’s high quality (local, organic).
But I really love how veggies make me feel, so I almost always go for vegetarian over meat.

These all look so delish!!! I think if my hubby decided to go meatless it would be easier than if I did. I would have a much harder time having him give up meat than it would be for me to give it up! This Fall I am going to try with meatless Mondays. These recipes will certainly help!

You know what’s crazy? This whole time I’ve read your blog, I’ve never actually realized y’all were vegetarians!! (with the occasional fish) I think that gives a full testament to vegetarian food being sufficient, hearty, delicious, and well rounded. I, personally, do eat meat… so for a meat eater to think your meals day-in, day-out are delicious and appealing says something 🙂
