Loaded Sweet Potato

Remember when I posted this loaded potato in Lindsay’s Lunchbox a few weeks ago? Well it was a big hit with the hubby…and he’s asked for it a couple of times since then. Weirdly, I almost made him one for lunch yesterday, but ended up making pancakes instead….

So when we were figuring out what to make for dinner and he said that’s what he wanted, I jumped on board quickly. We used whatever veggies we had in the fridge…this time it was green and red pepper, red onion and mushrooms….along with black beans and the leftover chicken from the Tandoori Chicken Sandwich. We seasoned the mixture with curry powder, cumin and pepper and sauteed until the veggies started to soften.

Hubby wanted his in a microwaved sweet potato like last time, topped with cheese and salsa…

Whereas I opted to dice my sweet potato, roast it and then eat everything over a bed of quinoa…

I love using leftovers to make a totally different meal!

I’m off to the bookstore to drool over cook books and hopefully get some new recipe inspiration!

  1. Hahahaha I love the recipe, yes, but my favorite part of this post was “off to the bookstore to look at cookbooks” as I am totally guilty of doing the same thing (even taking out a notebook and copying recipes down without purchasing a thing…) :)

  2. Yes! I love using leftovers for new creations. Fantastic and easy meal! I actually have some of these ingredients at home…might just be making this for dinner tonight!

  3. I always have trouble using up leftovers! I’ve gotten much better at only making what we will eat unless I can freeze it. I do have a few potatoes at home and I know I’ll have leftover Cuban pork tonight. This might be a perfect dinner for tomorrow!

  5. Love the loaded sweet potato concept. I also love using leftovers in all sorts of ways and you nailed it here. I generally toss leftover veggies into an omelet. Works well in a potato too. Great blog.

  6. What a great idea! I love sweet potatoes…and loading one up sounds totally delish :)

  8. Your meals always look so delicious and creative!! I am so much more motivated to try new things for breakfast than I am for dinner. I would love to go outside the box a little more. Sweet potatoes are one of my favorite foods :)
