Remember when I posted this loaded potato in Lindsay’s Lunchbox a few weeks ago? Well it was a big hit with the hubby…and he’s asked for it a couple of times since then. Weirdly, I almost made him one for lunch yesterday, but ended up making pancakes instead….
So when we were figuring out what to make for dinner and he said that’s what he wanted, I jumped on board quickly. We used whatever veggies we had in the fridge…this time it was green and red pepper, red onion and mushrooms….along with black beans and the leftover chicken from the Tandoori Chicken Sandwich. We seasoned the mixture with curry powder, cumin and pepper and sauteed until the veggies started to soften.
Hubby wanted his in a microwaved sweet potato like last time, topped with cheese and salsa…
Whereas I opted to dice my sweet potato, roast it and then eat everything over a bed of quinoa…
I love using leftovers to make a totally different meal!
I’m off to the bookstore to drool over cook books and hopefully get some new recipe inspiration!
