It’s that time again….FRIDAY!!!!
This week’s featured lunch bags come to your courtesy of my friend Trevor. He emailed me the picture below and informed me that Lean Cuisine now has a line of lunch bags. (He wanted to be clear that although not for him, he thought some of my lady readers might be interested!) I don’t eat Lean Cuisines, and for the most part don’t encourage other people to either….but occasionally they’re ok. And if you enjoy them, you should definitely cash in on this offer!
I especially like this one:
Check out the details here!
In case you’re new to Lindsay’s Lunchbox, it’s a weekly feature on my blog where I post a few healthy lunch ideas. In addition, I ask readers to send me pics of things they ate for lunch this week. I compile them all into these posts, thus providing everyone reading with a one-stop shop for lunchtime inspiration! Did you eat something great for lunch this week? Next time, snap a picture and email it to me at theleangreenbean@gmail.com!
Here’s your food ideas for the week:
1) Ants on a log
Nothing like going back to your childhood, right?! I used to love this for a snack when I was little, and now I pack them in my lunch all the time. If you’re not a fan, try cream cheese on ritz crackers with small bites of strawberry and call it ladybugs on a stump!
And yes, I like to really cram the ants on there!
2. Apple rings
If you don’t have an apple corer, do yourself a favor and go get one. They’re only about $5 and they probably sell them at your grocery store. And they make lunchtime LOTS of fun! It’s nice to change it up from the old slice and dice and enjoy the ring shape
Core your apple, pat dry and top however you want. My favorite combo is peanut butter and chocolate chips…but I also enjoy Chobani and almonds, and I even topped some with my sweet potato dip! Get creative.
*Oh…just don’t go into it thinking that your pb is gonna spread on there all nicely. It doesn’t. And it’s very frustrating. At least it is for me…but they’re so good that i’m generally ok with exhausting all my patience on the little gems
If you have more time, I’d recommend making these Apple Nachos. Not gonna lie, those may or may not have been the main reason for me buying my apple corer.
Also, I would HIGHLY RECOMMEND make this PBBAG Sandwich with your apple slices. Deeeeeeeelious.
3. Popcorn
What’s not to love about this light, airy snack. Buy the low-fat or fat free kind, not the kind drowning in butter, and buy the mini bags. Best part? You can eat SO MUCH OF IT!
You could also make this Popcorn Trail Mix or indulge in this Poppy Chow!
Reader Submission:
Alicia @ AliGirl Cooks sent me this delightful salad picture!
She said, “I started my week planning on having a standard aka boring salad for lunch each day. On Monday afternoon @marykateruf tweeted an awesome salad she made for lunch full of feta, cranberries, and walnuts with a creamy balsamic dressing. I asked her for the dressing recipe and she tweeted back the ingredients and this awesome lunch was created! I haven’t perfected the dressing yet but I’m going to keep working on it.”
And finally, in exciting news…I got a new lunchbag this week!! It’s made by Blue Avocado. Check out all their stuff, it’s so cute! I found it on clearance at Sur La Table for $12. I love it because my Fit & Fresh container from my other lunch box can fit inside it, there’s a little holder for my water bottle, and it has a long shoulder strap!
Also, you can fold the whole thing up into that little pouch on the front!
So tell me, what does your lunchbox look like? Send me a pic and i’ll include it in next week’s edition
Have a great weekend!

That’s such a cute lunch box. I’m obsessed with Sur La Table. I’d rather spend money there than at the clothing stores at the mall!

me too!! i found some really cute clearance placemats too!
You can also make FIRE ants on a log with craisins. I don’t know why I love craisins + peanut butter so much (oh wait, yes I do..Archer Farms Vanilla Cranberry Peanut Butter has RUINED me…).

Those apples look delicious. Cool idea. I will have to make some. I will probably top it with some peanut butter and raisins, or some plain ol’ cheddar cheese
