Who knew lunch bags could be so stylish?!
In case you’re new to Lindsay’s Lunchbox, it’s a weekly feature on my blog where I post a few healthy lunch ideas. In addition, I ask readers to send me pics of things they ate for lunch this week. I compile them all into these posts, thus providing everyone reading with a one-stop shop for lunchtime inspiration! Did you eat something great for lunch this week? Now on to the food ideas…
1. Fritatta Sandwich
If you eat at home, you can whip this up pretty quickly. If not, have no fear! Just make the fritatta the night before, slice it and pack it up. Then toast your bread at work, reheat the fritatta in the microwave and voila! The version I made is one we actually ate for dinner this week. I was cleaning out the veggie drawer before we went grocery shopping so this fritatta has bok choy, onion and mushroom….but the pan is your oyster! Throw in whatever veggies or meat you want, saute, add the eggs and top with cheese at the very end.
2. Tuna Rolls
I saw this recipe in my new Eating Well and decided to do my own version…spread some tuna salad (made with a can of tuna, a little Greek yogurt, a few scallions, some curry powder, ground mustard and cayenne pepper) on a whole wheat tortilla. Top with barley (or brown rice…I had leftover barely in the fridge so I used that). Add some orange or red peppers )or carrots) and some avocado. Roll up, slice and enjoy
Had I paid more attention to the original recipe, I would have added some spinach to wrap around the veggies too!
3. Oatmeal Bake
Or baked oatmeal…whichever you prefer. Now hang with me friends! I know this is typically a breakfast food…but I’m a cereal girl. There’s nothing better than cereal for breakfast. But I also enjoy oatmeal. And if you’ll remember from a few weeks ago, I think it’s a great lunch idea. I also think this idea is even better. Baked oatmeal is HUGE in the blog world. It seems like everyone eats it. I’d never tried it, but when I saw Amanda post this Blueberry Breakfast Bake, I knew I had to make my own version!
For my version, I used:
1/2 c oats
1/2 c Skim milk
1/2 tsp baking powder
1 banana
1/2 c blueberries
1/2 tsp cinnamon
1/2 tsp vanilla
1 Tbsp peanut butter
Directions:
Mix together the oats, milk, baking powder, cinnamon, vanilla, peanut butter and half the banana (smashed). Stir in the other half of the banana (sliced) and the blueberries. Pour it into a greased ramekin and bake at 375 degrees for 25 minutes.
It was delicious. Kinda like a giant muffin. I loved the sides and top and am seriously considering baking it in a brownie edge pan
OR a donut pan….or maybe just a small pan that’s more rectangular than circular to get more golden brown surface area!

ok, so you get the idea…there are tons more out there! or you can just make up your own and hope for the best like I did. Throw this in the oven while you’re home for lunch, or for a nice weekend lunch. Or bake it at night, pack it in your lunch, reheat and top with some yogurt for lunch the next day…or breakfast….or dinner. Moving on…

Yay! I’m glad you made your own breakfast bake, it looks delicious!! On a side note, the other day I actually made mine in a mini muffin pan, it made 9 little mini breakfast bake muffins! They were so fun to eat!

The lunchbags are just the cutest. I also have a baked oatmeal recipe to try out. The first time I ever had it was when we were in Yellowstone last summer and I fell in love with the dish! I’ve been wanting to try my own ever since!

I have again failed you in my lunch contributions…perhaps because this week I’ve been suffering from who knows what and my lunch consists of (low sodium and no MSG—I checked) insta-soups and curries from the Asian market. I have decided that should I be laid off due to the education budget cuts, at least my lunches might start to be more exciting. [We find the pros in life where we can, no?

In other news, I agree with you on the cereal thing (at least for right now), but baked oatmeal is something I have never done, and might just have to try!
