Lindsay’s Lunchbox #7

Happy Friday, my friends! First things first.

1) If you look to the left of your screen, you’ll see some changes have been made to the blog. First of all, it’s now three columns instead of two. I recently was approved as a Foodbuzz Featured Publisher! It’s been one of my goals since I started the blog and I’m so excited that it’s finally worked out.

2) I’m slightly computer challenged. I’m doing my best to try to learn all of this coding and widget stuff to make my blog look presentable again. It might take some time…so please hang with me! The main problem is that the size of the middle column has changed and now all of my picture layouts are messed up :( Like I said, I’m working on it…but i’m not sure if i’ll be able to fix past posts or if i’ll just have to focus on future posts.

Basically what it boils down to is “Please excuse my virtual dust while I reconstruct!” THANK YOU!!

In case you’re new to Lindsay’s Lunchbox, it’s a weekly feature on my blog where I post a few healthy lunch ideas. In addition, I ask readers to send me pics of things they ate for lunch this week. I compile them all into these posts, thus providing everyone reading with a one-stop shop for lunchtime inspiration! Did you eat something great for lunch this week? Moving on to food, here’s a few ideas for you this week:

1) Loaded potato
Bake them the night before or stab one a few times with a fork and throw it in the microwave for five minutes. Then, instead of topping it with sour cream, bacon and cheese, try adding some or all of the following toppings: black beans, vegetables, chicken sausage, barley, salsa, cumin and a little cheese!

Although I was already planning to make these, I was happy to see them pop up on a couple of other blogs this week as well! Both Jessica & Erica enjoyed these delightful treats this week. And you may remember we enjoyed them in NYC as well.

2. Grilled Cheese
I mean really, does it get any easier. Some bread, a little butter, some cheese and a little heat…Voila! Bonus points for using homemade bread like I did!

3. Parfait
One of my favorite lunchtime treats! So versatile. Use your favorite fruits, you favorite yogurt and even add some oatmeal for an extra punch!

  3. I think practically every day of my first year teaching I ate some version of a parfait. I packed cereal in one container, yogurt in another, and fruit in a third, and then made little “bites” on my spoon, rather than really assemble the whole thing.

    I don’t know why, but it has continued to remain a very comforting meal for me (although it’s often more of an “at work” breakfast now).

  5. Congrats on the Foodbuzz! It’s a great program! I used to have baked potatoes for lunch when I was in college but those have totally been dropped off lately! I need to reincorporate them! I have been waiting for a good picture to send your way!

  6. Your parfait looks like you put an oatmeal cookie layer in there, yum! Do you have a Paradise Cafe near you? They serve oatmeal for breakfast, but in the bottom of the oatmeal bowl is an oatmeal raisin cookie!
    I do want all those lunch boxes. I’m a sucker for cute things :)

    • omg a cookie in a parfait?! GENIUS! i must try that immediately. we don’t have a paradise cafe but that sounds like something i can recreate!! thanks for the tip!! I have been known to crumble cookies into my oatmeal on occasion :)

  7. I love looking at new lunchboxes- I wanted a new one for my birthday and I spent days on amazon ogling all of the cute ones! But then I ended up with a cheapo from TJ Maxx- but it’s as cute as all of the Built ones!

  8. I always use those exact same stemless wine glasses for my parfaits too!

    Your stuffed potatoes look so good, I am definitely going to have to make pizza stuffed sweet potatoes soon after seeing them everywhere now, yum!
