Today I’m sharing a couple of my go-to lunches for when I’m just not in the mood to think of anything more exciting, along with one of my new favorites.
1) Peanut Butter & Banana sandwiches
I used to love these as a kid and then I forgot all about them for about 15 years. When I went back to school and had to start packing my lunch, I rediscovered my love for them and now I probably pack one in my lunch at least one a week.
*Bonus! If you want your dogs to love you, shove the rest of the banana in a kong with some peanut butter and watch them try to get the banana out! Endless entertainment*
As you may have gathered by now, I’m a cereal fanatic. I eat it for breakfast, I eat it before I go to bed, I eat it for dinner….and sometimes I eat it for lunch too Pick up one of these handy containers that keeps your milk and cereal separate until lunchtime!
Great for portioning your cereal as well! Or, if you’re at home, a regular bowl will do just fine!
And for a newly discovered favorite:
3) Pizza roll-ups!
I don’t buy fresh mozzarella all that often, but I needed some for my Chicken Parm bites and I had some leftover so I put it to good use! Spread some tomato sauce on a tortilla, cover with spinach and top with fresh mozzarella. Microwave to melt the cheese, slice and enjoy! Tastes just like a slice of pizza. You could also use shredded mozz or add some pepperoni or chicken sausage if you want to.

(which, by the way, is one of the best blog names I’ve ever heard and is an awesome vegetarian blog- go check it out and give her some love…she’s new to the blogging world) sent me these Mini Loaded Baked Potatoes. The perfect size to pack in your lunchbox!
Alicia @ AliGirl Cooks said: “This week I roasted some veggies to throw in a salad or a wrap. I’m getting tired of cucumber, tomatoes, and celery so I roasted zucchini, eggplant, peppers, and onions.
