Lindsay’s Lunchbox #6

Happy Friday friends!

I’m semi-embarrassed to you guys admit how much I love searching for fun lunch boxes to put at the beginning of these posts.  I wish I could have them all!

Like these organic cotton lunch sacks with removable plastic liners :

I’m also seriously considering buying this. I mean, my hubby majored in physics in college….doesn’t get much nerdier than that folks! And I do love him so :)

In case you’re new to Lindsay’s Lunchbox, it’s a weekly feature on my blog where I post a few healthy lunch ideas. In addition, I ask readers to send me pics of things they ate for lunch this week. I compile them all into these posts, thus providing everyone reading with a one-stop shop for lunchtime inspiration! Did you eat something great for lunch this week? Next time, snap a picture and email it to me at!

**This week I’m adding a request to spread the word about Lindsay’s Lunchbox. Do you have a bigger blog that reaches a larger audience? Let them know about Lindsay’s Lunchbox and help me collect healthy lunch ideas to share with everyone!**

Today I’m sharing a couple of my go-to lunches for when I’m just not in the mood to think of anything more exciting, along with one of my new favorites.

1) Peanut Butter & Banana sandwiches
I used to love these as a kid and then I forgot all about them for about 15 years. When I went back to school and had to start packing my lunch, I rediscovered my love for them and now I probably pack one in my lunch at least one a week.

*Bonus! If you want your dogs to love you, shove the rest of the banana in a kong with some peanut butter and watch them try to get the banana out! Endless entertainment*

2) Cereal
As you may have gathered by now, I’m a cereal fanatic. I eat it for breakfast, I eat it before I go to bed, I eat it for dinner….and sometimes I eat it for lunch too :) Pick up one of these handy containers that keeps your milk and cereal separate until lunchtime!

Great for portioning your cereal as well! Or, if you’re at home, a regular bowl will do just fine!

And for a newly discovered favorite:

3) Pizza roll-ups!
I don’t buy fresh mozzarella all that often, but I needed some for my Chicken Parm bites and I had some leftover so I put it to good use! Spread some tomato sauce on a tortilla, cover with spinach and top with fresh mozzarella. Microwave to melt the cheese, slice and enjoy! Tastes just like a slice of pizza. You could also use shredded mozz or add some pepperoni or chicken sausage if you want to.

Danielle at No Eyeballs Please! Dinner for Vegheads! (which, by the way, is one of the best blog names I’ve ever heard and is an awesome vegetarian blog- go check it out and give her some love…she’s new to the blogging world) sent me these Mini Loaded Baked Potatoes. The perfect size to pack in your lunchbox!

Alicia @ AliGirl Cooks said: “This week I roasted some veggies to throw in a salad or a wrap. I’m getting tired of cucumber, tomatoes, and celery so I roasted zucchini, eggplant, peppers, and onions. I used some leftover chicken fingers or black beans for an extra protein punch!” Alicia’s celebrating her 1 year blog anniversary so be sure to stop by and check out her giveaways!

I leave you with a gentle reminder that there’s still a couple of days left to use the 10% code to buy some reusable snack or sandwich bags from the Etsy store featured in my giveaway. The giveaway is over, but the code is good until Sunday. Please consider buying one or two of these bags and doing your part to save the environment!

Here’s the Etsy site: Bag It Conscious
Please remember:

To receive a 10% discount, enter the code “BAGIT2/11″ in the message to seller at the time of your purchase and she will reimburse you after your order is processed. This code will be valid from Monday 2/7/11- Sunday 2/13/11.

**Note that Lizzy is currently having a sale if you purchase 4+ bags and this 10% code cannot be combined with that offer. However, if you’re buying 1-3 bags, you don’t need to worry about it! It also cannot be combined with the mix and match option because those are already discounted!**

Here’s a few of my favorites :)

And really, who doesn’t need more silly birds in their life?

Lizzy told me that several of my readers have placed orders and gotten the discount!!!! AMAZING! Were you one of them?! Let me know :)

  2. Love those lunch boxes!!!! Mmm….all that food looks so good:)

  3. Those lunch boxes are adorable! I love the idea of the pizza roll up (pure genius, esp with access to a microwave) and the cereal container is going on my list immediately! I’m a cereal freak too, but don’t even let myself have any anymore because I can sit and eat an entire box :)

  4. I forgot to send you a picture this week! I’ll try to remember for next Friday :) And I’ll put the word out too of course!

  6. pizza roll ups are SUCH a good idea! And I always forget how delicious nut butter and banana sandwiches are. Have a wonderful weekend :)

Oh- and I totally missed my chest with sun tan lotion our first day(whoops). Josh also missed his forehead the first day. We both laughed about it because we each had that 1 obvious spot. 😉

  7. Add a little honey to that peanut butter & banana and you’ll have even MORE awesome between two slices of bread. [And switch it up with pears and maple syrup….]

Also, cereal is pretty much the staple food of my diet at the moment. Perhaps that is why I haven’t sent you my lunch photos.
