Lindsay’s Lunchbox #5

Hi Friends!

The winter weather over here kinda put a wrench in my schedule this week so I was a little off my game in the lunch department. Not to worry though, I still have a few ideas for you!

In case you’re new to Lindsay’s Lunchbox, it’s a weekly feature on my blog where I post a few healthy lunch ideas. In addition, people send me pics of things they ate for lunch this week. I compile them all into these posts, thus providing everyone reading with a one-stop shop for lunchtime inspiration! Did you eat something great for lunch this week? Now for the food ideas:

1) Tacos
I think if I let him, my hubby would eat everything I make wrapped in a tortilla. In fact, almost all leftovers get turned into a taco the next day day for lunch. This week I jumped on board and turned my leftover nacho toppings into a taco, because we all know how soggy and gross chips get if you put them in the fridge. Along the same lines, make sure you pack your taco filling and your tortilla separately in your lunchbox to avoid sogginess.

2. Pasta Salad
I love pasta salad because it’s a great way to get your veggies. Veggies always taste better to me if there are noodles to go along with them :) Plus, most pasta salads taste just as good cold as they do warm, making them a perfect addition to my lunchbox. This week I brought leftover Orzo & Veggie pasta salad with me. In the warmer months, I’m sure I’ll whip up more than a few batches of this Chickpea Pasta Salad with Italian dressing.

3. Homemade soft pretzels
Who doesn’t love soft pretzels?! And do you know how easy it is to make them at home? This weekend I whipped up a batch of homemade pretzel bites and I enjoyed some in my lunch everyday until Tuesday when they were all gone…

  1. I agree, Nick would eat anything I wrap in a tortilla too!! That’s always my go-to dinner or packed lunch for him, a whole wheat tortilla, wrapped around….something. So easy!

    I have one of those neat lunchboxes too, well made by the same company anyways. Mine isn’t purple, it’s black, almost like a purse. I love it!

  2. I have had a bad week of lunches all week, so thanks for sharing the inspiration. I usually take a simple salad — almost all veggies, some cheese and some chicken, but I find myself ravenous still after, so those pretzel bites look like something that would be a perfect afternoon snack that would help with my carb fix!

    • you’re welcome! definitely give the pretzels a try. we love them. i’ve been thinking about trying them with 1/2 wheat flour for an extra health factor :)

  3. You are right, everything tastes better in a tortilla! My lunches were so uninspired this week and I forgot my camera for the one that was actually good :( I need to get back on my A game next week!

  7. I have failed you yet again…seriously, I love this whole idea about sharing lunches (and lunchboxes)…I just can’t seem to get my act together to send you something to feature!

    Anyways, I love that you have the patience to make soft pretzels. I clicked the link to the recipe and got scared. :)

  8. i think i’m like your husband – any leftovers that can be wrapped in a tortilla (so pretty much anything but soup) get wrapped in a tortilla! :) i have some fun lunches planned for next week (i’m doing morgan’s vegan for a week challenge) so i’ll be sure to snap some pics and send them on to you. :) hint: there may or may not be lentils involved!
