If you’re new to Lindsay’s Lunchbox, it’s a weekly feature on my blog where I post a few healthy lunch ideas. In addition, I ask readers to send me pics of things they ate for lunch this week. I compile them all into these posts, thus providing everyone reading with a one-stop shop for lunchtime inspiration! Did you eat something great for lunch this week? Here’s your ideas for this week:
1. Roasted Peas
Probably one of my top 3 favorite snacks to munch on of all time. Roasted chickpeas have been a fav for a while now…but this week I added split peas to the mix and it was a BRILLIANT move. I roasted them separately and then combined them. For the chickpeas, drain, rinse and pat dry. Spray with olive oil, season with curry powder, paprika and cayenne pepper and roast at 400 degrees until crunchy! For the split peas, cook according to package directions, then spray, season and roast the same way! Combine when cooled and munch to your heart’s content!
2. Quinoa Bowls
Cooking a batch of quinoa on the weekend was the best decision I made this week. Having it already cooked makes it so easy to throw lunches and dinner together quickly. This week I’m loving quinoa topped with roasted veggies and fresh mozzarella cheese! Mix it up and try fresh veggies, or add your favorite dressing for some extra flavor.
I’ve been all about veggie bowls this week. I also enjoyed one with orzo and sauteed veggies, topped with roasted sweet potato!
I turned my last bit of whole wheat dough into a thin crust/flatbread type crust for a couple of personal pizzas. I wasn’t sure it would work out since it was supposed to be bread dough and i was trying to make pizza crust, but I gave it a whirl. I focused on rolling it out really thin, so one spot got a bit burned, but i was cutting it in half anyways so i just cut around that part! Top with tomato sauce, chicken and veggies! I spiced this one up by adding shaved asparagus!!! The crust turned out great- crispy and delicious. It was a big hit with the hubby.
