Even though I woke up to pouring rain this morning, over the weekend we lucked out here in Ohio and had two evenings perfect for grilling. Of course the hubby and I took advantage.
I remembered seeing some potatoes done on the grill in a blog post a few weeks ago, but try as I might….I couldn’t find the original post! After about 20 minutes of searching so that I could double check my memory I gave up, figuring…how hard could it be?
The thing I found most interesting about this method is that you microwave the potatoes BEFORE you cook them on the grill! That way you can get that wonderful grilled taste, but you don’t have to leave them on there forever and worry about them cooking all the way through.
Here’s what you do:
Cut some fingerling potatoes in half. Throw them in a tupperware and microwave them one minute at a time, checking with a fork after each minute to see when they are tender. Mine took about 3 minutes.
Remove from the microwave, drizzle with olive oil and toss with some rosemary and black pepper. Then let them cool slightly. Or burn your fingertips like I did when you try to immediately move on to the next step….whatever.
After they have cooled slightly, carefully thread them onto skewers. This takes a little practice because the potatoes will be kinda soft since they’re cooked. Try to line them up so that all of the cut halves are even so they will lay flat on the grill and get some nice grill marks! Turn them a couple of times to grill all sides.
We enjoyed ours with some hot italian sausages and some grilled asparagus.
The hubby liked these so much he requested them the next night as well! This time I was much better at threading them on the skewers!
For grilling night #2, I also tried out my new toy from World Market. (Reason #987 why I love World Market? They send you a $10 gift certificate for your birthday!) Since my birthday is coming up, I got mine in the mail last week and spent it immediately of course
I bought a veggie grill pan so last night I loaded it up with some chopped veggies and gave it a whirl.
The pan gets really hot when you put it on the grill and grills your veggies for you without you having to worry about them falling through the cracks…although I may have overfilled my tray and I lost a few over the side while I was stirring them around.
While the veggies were roasting, I also cooked up some pasta. Then I added my veggies to the pasta for a nice little grilled veggie pasta salad. Add some Italian dressing and you’re good to go
We also grilled some chicken and topped it with a little bbq sauce. YUM.
The potatoes get nice and crispy on the outside but are nice and soft in the middle!

Yum!!! Talk about a delicious way to use potatoes! I have to say I love grilled fruit. I have it so rarely because only certain people do it that grill – and seeing as I don’t have a grill – I mooch off of these certain people. Grilled pineapple is so so good!

This looks awesome Lindsay!! Over the summer last year, we made grilled potato salad and it was SO good. Same concept, except we made it into potato salad after the potatoes were grilled so it had that smoky flavor. Yum!

LOVE grilling! We did up turkey burgers last night. My favorite thing to grill? Probably eggplant! or pineapple. I love doing the partial microwave of the potatoes before the grill. Helps them to cook through perfectly, while still being able to get that nice grill crisp. What a fabulous din din

Pizza on the grill is utterly amazing! We make it at least twice a month during grilling season. Bonus is that it’s one of the limited meals that my husband is comfortable making all on his own, so I can take the night off!
