If you’ve been reading for a while now, you know what a big fan I am of banana bread. i LOVE it. It’s one of the first things my mom taught me to bake and over the years I’ve made a million different recipes. One thing I haven’t really experimented with, however, is mix-ins. Adding some chocolate chips is about as exciting as it gets around here usually.
While I was digging through the freezer last week, I came upon some cranberries and I thought they might be a fun addition to the banana bread I was planning to make. After posting about it on facebook, Nicole made a brilliant suggestion:
I didn’t have any walnuts, but I did have almonds so I chopped some up along with the cranberries and mixed them into the batter. I used my Honey Oat Bran Banana Bread recipe this time and cut all the ingredients in half. I had just enough to make two mini loaves!
The bread turned out great! I LOVED the cranberries. I’m not totally crazy about nuts in bread usually, but the almonds were a nice way to switch it up 🙂
So tell me…do you have a favorite mix-in? Or do you like your banana bread plain?
