Cranberry Almond Banana Bread

If you’ve been reading for a while now, you know what a big fan I am of banana bread. i LOVE it. It’s one of the first things my mom taught me to bake and over the years I’ve made a million different recipes. One thing I haven’t really experimented with, however, is mix-ins. Adding some chocolate chips is about as exciting as it gets around here usually.

While I was digging through the freezer last week, I came upon some cranberries and I thought they might be a fun addition to the banana bread I was planning to make. After posting about it on facebook, Nicole made a brilliant suggestion:

I didn’t have any walnuts, but I did have almonds so I chopped some up along with the cranberries and mixed them into the batter. I used my Honey Oat Bran Banana Bread recipe this time and cut all the ingredients in half. I had just enough to make two mini loaves!

The bread turned out great! I LOVED the cranberries. I’m not totally crazy about nuts in bread usually, but the almonds were a nice way to switch it up :)

  3. That looks great! It looks moist and fruity – delish! I’m a fan of chocolate chips or walnuts in my banana bread, but it’s good plain. I just like bread. :)

  4. I love good ol’ banana bread. Zucchini bread is one of my favs, too. I wonder how they’d taste in the same batch of bread? Probably pretty good!

  5. What a fantabulous combination of flavors! I usually don’t like any nuts in my bread either but I can definitely do this and chopped walnuts. I’m obviously not picky.

  6. I’m usually a plain banana bread person, too, but sometimes I’ll do coconut and crushed pineapple to mix things up a bit. I love the idea of cranberries and almonds in it.

  7. Banana bread is SO good. There is something super comforting about it. Cranberries sound like a yummy add in. I usually like mine plain, but dried cherries and any kind of nut/seed is fun too!

  10. Love your basic banana bread, but think it’s extra amazing if you mix in some spelt flour (I use 1/2 white and 1/2 spelt in mine). It adds a nutty and warm flavor. So yummy.

  11. I love banana bread too—I usually prefer it smooth with no add-ins, but I think chocolate chips might work well for me :)

  12. Oh my gosh I love banana bread!! I LOVE adding an avocado to the badder! It adds a wonderful creaminess and a cute green tint!!

    Chocolate chunks is always a classic too!
