This cinnamon roasted sweet potato parfait is healthy enough for breakfast and sweet enough for dessert!
Hi Friends!
Let’s talk sweet potatoes. I have a bit of a problem when it comes to them. The problem is that for some reason I feel compelled to buy some every single time I go to the grocery store. Even if I already have some at home.
Consequently, I’m constantly having to come up with new ways to eat them. So here’s my latest creation:
Cinnamon Roasted Sweet Potato Parfait
Side note- Parfaits are extremely hard to photograph, it turns out, especially when in clear glasses. But you get the idea!
Here’s how you make them:

Healthy enough for breakfast, sweet enough for dessert
Ingredients
- 2 cups diced sweet potatoes (1 medium)
- 1 Tablespoon coconut oil, melted
- 1/2 teaspoon vanilla extract
- cinnamon, to taste
- Greek yogurt (vanilla or plain)
- pumpkin seeds, optional
Instructions
- Spread the sweet potatoes out on a foil-lined baking sheet.
- Mix melted coconut oil and vanilla in a small dish and pour over potatoes.
- Stir until well coated, then sprinkle with cinnamon.
- Roast at 425 degrees F for 15-20 minutes, stirring occasionally, until sweet potatoes reach desired doneness.
- Layer sweet potatoes and greek yogurt in a bowl and top with pumpkin seeds.
Pretty simple, right?
If you don’t like pumpkin seeds, sprinkle with your favorite chopped nut. If you want to make this more dessert-like, you could sprinkle with sugar before roasting or add a drizzle of honey to your parfait.
Or top with ice cream instead of Greek yogurt. Just sayin….

I love using sweet potato in sweet recipes! I am an absolute sweet potato addict – I eat it almost everyday! I love to add pureed sweet potato to my smoothies as I have found it makes them really creamy.
My favourite combo is a baked sweet potato topped with cinnamon, peanut butter and greek yogurt.

I am the same way with sweet potatoes. We always have tons of them on hand. In fact, my sister will buy us a huge box from a farm and we split the cost (which is like 6 bucks!). My husband always gets annoyed thinking I won’t use them all (and they take up a ton of space). Oh, I do! Haha This looks fantastic.

I do the exact same thing – always come home with another two sweet potatoes! Love recipes like this – I often add sweet potatoes to greek yogurt and/or oatmeal parfaits.

Now all you need to do is add in some nut butter! One of my favorite things to do is to top my baked (microwaved) sweet potatoes with vanilla or maple almond butter. It is SO good!

I had given up dairy for almost a year but really was missing Greek yogurt. I now enjoy it on everything again, in small amounts and especially sweet potatoes and roasted squashes too. Looking good!
