Happy Monday 🙂 Today I have a delicious new breakfast to share with you guys. As I’m sure I’ve mentioned on here before, quinoa is not my favorite. However, I know how healthy it is and what a great source of protein it is, especially for vegetarians, so over the past year I’ve been making an effort to eat it more often. This means I’m always searching for different recipes in hopes of finding some I really like.
The good news is, I’ve found a few over the past several months. The great news is I have one to share with you today!
As we all know, I’m a huge breakfast fan. In fact, a lot of days I eat it for multiple meals. Last week I made breakfast quinoa…and ate it for lunch….and it was delicious.
I cooked the quinoa in milk with some strawberries and it topped with with peanut butter, almonds, sliced bananas, a few chocolate chips and a drizzle of agave. Holy YUM!
Berry Breakfast Quinoa
Cook Time: 20 min
Keywords: stovetop breakfast healthy vegetarian low-sodium fruit quinoa
Ingredients
- 1/4 c quinoa, dry & rinsed
- 1/2 c milk
- 1/2 c berries
- dash cinnamon
- 1/2 tsp vanilla
Toppings
- nuts
- fruit
- chocolate chips
- nut butter
- agave/honey
Instructions
1. Combine the quinoa, milk, berries, cinnamon and vanilla in a small saucepan.
2. Bring to a boil, then reduce heat and simmer 15-20 minutes until liquid is absorbed.
3. Add toppings and serve warm.
This recipe could easily be doubled to make a larger batch to eat throughout the week. I looked at some recipes that added the berries in after cooking, but I decided to just throw mine in while it was cooking. As a result, the berries kinda disolved into the quinoa making it a pretty pink color!
The only thing you need to keep in mind is that adding the berries means there’s a little extra liquid as they dissolve so you may need to cook the quinoa a bit longer than usual so all the liquid can be absorbed. Play around with the toppings to find a combo you like! Next time i’m adding greek yogurt!

My favorite way to eat quinoa right now is like fried rice. I’m to lazy to cut up veggies so I just throw frozen broccoli in with cooked egg, quinoa, and soy sauce.

I haven’t made a sweet quinoa dish before, but I’ve always wanted to so this is getting pinned! Right now my favorite way to eat quinoa is in a quiche (using quinoa as the “crust” or in a salad with feta, dill, cucumber, tomato, and EVOO).

I wish they had served everyone the quinoa they served with the chicken dish at Blend. I have never tasted anything like it. Must try to recreate it! 🙂

YUM! During Passover, I made several different quinoa bowls as I learned quinoa is NOT a grain (and therefore acceptable for Passover). My favorite sweet one I made was a coconut quinoa bowl!! With coconut flakes, coconut butter, and almond milk! Mmmm mmm mm!

I’ve had great overnight oat bowls similar to this one! Bananas, Carob Chips, Ground Flax Seeds and PB (or PB2)….YeeeeYummm!

Probably a dumb question – but what is the purpose of “rinsing” the quinoa? Does it help it taste better? I’ve only used quinoa a few times, but am not so thrilled with it’s “taste/smell”… maybe b/c I didn’t rinse?????

not a dumb question! rinsing quinoa helps wash away the bitter taste. There are some kinds you can buy that have already been rinsed so that’s what I look for…but definitely rinse it before cooking! It will help it taste better. Also, cooking it in broth instead of water (for other recipes, not this one) helps give it a better flavor too!

This looks awesome! I’ve added pumpkin and cinnamon before to make a sweet treat. My favorite way to eat it though is in a junk salad with all the veggies I can find!

yum! i love quinoa, but my favorite way to eat it is as a base for burrito bowls. i make it w/ lime juice & cilantro for a chipotle-like version. 🙂

I have made a sweet version like this before 🙂 I love quinoa in all forms 🙂 If you want to try something that involves quinoa, but since I know it is not a favourite of yours, try to make a pizza crust or omelet with some quinoa added into it 🙂 I have done that before (because I LOVE quinoa) and mmmm so good 🙂

This looks so good! I’ve actually never tried quinoa for breakfast before because I just love my oats too much for breakfast. 😛 But I want to try this!
My favourite way to eat quinoa is with chickpeas, feta, parsley, tomatoes, cucumber, lemon juice and olive oil. I love making a huge batch for lunches all week!

hmmm tough call. this one is quite different than any other quinoa recipe i’ve had so i’d probably start with a more traditional recipe. try rinsing it and cooking it in chicken or veggie broth and then using it instead of rice in a stir fry!
